Uzputenis: a simple apple dessert from childhood
Latvijas Avīze shares a recipe for a light, airy apple dessert made with semolina — a classic treat many associate with childhood memories.

Uzputenis, a light and airy apple dessert, is a treat that many associate with childhood memories. It can be made from just a few simple ingredients and suits both everyday meals and festive tables. The recipe was published by Latvijas Avīze, citing the outlet Praktiskais Latvietis.
Ingredients
The dessert requires 400 grams of apples, 400 millilitres of water, 60 grams of semolina, sugar to taste, a teaspoon of vanilla sugar or a pinch of cinnamon, and a few drops of lemon juice.
Preparation
The apples are peeled, cored and cut into cubes. The cubed apples are placed in a pot, covered with water and cooked until fully soft, then blended into a puree. Sugar, vanilla sugar or cinnamon, and lemon juice are added to the puree.
The pot with the puree is returned to the stove, and semolina is poured in a thin stream while stirring continuously. The mixture is simmered on low heat for a further 5 to 8 minutes, until the semolina has swelled.
The mixture is then cooled and whipped until it becomes light and airy and noticeably increases in volume. The finished dessert is spooned into bowls and served with cold milk.
