Apple and Brie Toasts: An Autumn Snack Ready in 15 Minutes

A recipe for open toasts topped with brie, apple, walnuts and honey, baked at 200 °C for 7–10 minutes. They can be served for breakfast, dinner or as a snack for guests.

The Latvian portal NRA has published a recipe for autumn-style open toasts built around four main ingredients: apple, brie cheese, honey and walnuts. The dish is presented as a quick snack that takes about 15 minutes to prepare.

What you need

The recipe makes four toasts. You will need:

  • 4 thick slices of sourdough, ciabatta or baguette;
  • 150–180 g of brie;
  • 1 medium apple;
  • 2–3 tablespoons of walnuts;
  • 1–2 tablespoons of honey;
  • a little butter or olive oil;
  • freshly ground black pepper;
  • optionally, a few sprigs of thyme.

Preparation

Heat the oven to 200 °C. Brush the bread slices very lightly with butter or olive oil and place them on a baking tray. Arrange slices of brie generously on top, then add very thin apple slices. Roughly chop the walnuts and scatter them over the toasts; thyme and pepper can be added if desired.

Bake the toasts for 7–10 minutes, until the bread is crisp and the brie is soft and slightly melted. Drizzle with honey only after taking them out of the oven. They are best served immediately, while the cheese is still warm.

Tips

The recipe recommends firm, crisp apples with pronounced tartness: they balance the rich, creamy brie and the sweetness of the honey, and they hold their shape during baking. If the apples are very sweet, less honey can be used.

Walnuts can be toasted in a dry pan for a couple of minutes beforehand to make them more aromatic and crunchier. For a stronger sweet-and-salty contrast, a small pinch of flaky salt can be added together with the honey.

The recipe can be varied: thin pear slices, pecans instead of walnuts, or a few drops of balsamic glaze all work. The toasts can be served for an autumn breakfast, as a quick dinner with a salad, or cut into smaller pieces as a warm snack for guests.
