For Mushroom Foragers: Now is the Time to Find Chicken of the Woods – a Healthy and Edible Polypore

After the spring edible mushroom season has ended and before the start of chanterelle season, foragers can search for the common sulfur polypore (Laetiporus sulphureus), one of the few edible polypores in Latvia, recognized as healthy.

The annual foraging period for spring edible mushrooms – morels and St. George's mushrooms – has come to an end. There is still a wait until the start of the summer chanterelle season, and it is too early to talk about later mushrooms like boletes. What can mushroom enthusiasts in Latvia do in the meantime? Experienced gourmands suggest turning attention to one of the few edible polypores in Latvia: the common sulfur polypore, also known as chicken of the woods (Laetiporus sulphureus). This mushroom is not only edible but also considered healthy. It provides an excellent option for those who wish to enjoy fresh mushrooms before the chanterelle season begins. The sulfur polypore grows on trees and is easily recognized by its bright yellow or orange color. However, proper identification is crucial to avoid poisonous species. Foragers are advised to consult experienced specialists or use reliable mushroom identification guides.
