Chanterelle season: preserving them beyond just frying
With many mushroom pickers coming home with baskets full of chanterelles, there are useful ways to preserve them for winter beyond frying or freezing — including pickling, aspic and salads.

As chanterelle mushroom season brings many foragers home with baskets full of finds, attention turns to how best to preserve this seasonal harvest for the winter months ahead. While frying chanterelles in sauces and freezing them are the most common preservation methods, they are far from the only options.
Chanterelles also lend themselves well to other preparation techniques. They can be pickled, allowing the mushrooms to be enjoyed year-round as a snack or side dish. Another option is preparing them in aspic, creating an original product with a longer shelf life. A further possibility is making mushroom salads, combining chanterelles with various vegetables to produce a ready-made dish suitable for everyday meals or festive tables.
These preservation methods are especially useful for those who, after a successful mushroom-picking trip, find themselves with a large quantity of chanterelles at home and need different ways to use and store the harvest over a longer period.
